“Do you trust us?”
After what I like to call “the Easter marathon”, I finally had a day to myself. The morning began with a cup of my favorite Greek coffee, and a peanut butter chocolate brownie. Fast forward to an evening shopping trip to Assembly square, (because….TJ Maxx, am I right?!), which led to apps and drinks at a nearby restaurant. My friend pulls a wrapped brownie out of her purse that I had snuck in there and suggested I give it to our server. Before I handed over the delicious brownie, I simply asked “do you trust us?”….Hopefully my new friend enjoyed his brownie and will come here someday telling me it was simply the best! Recipe below…
Peanut Butter Brownies:
227g unsalted butter 200g granulated sugar
175g chocolate chips divided 220g brown sugar
150g cake flour 3 large eggs room temp
50g cocoa powder 1 tablespoon vanilla
1 teaspoon salt 1/2 cup creamy peanut butter
Oven at 350 and line an 8 by 8 inch square pan with parchment paper. Melt the butter and add 1/2 of the chocolate chips. Whisk until melted completely. In a separate bowl, sift together flour, cocoa powder, and salt. To the melted chocolate, whisk in sugars, eggs, and vanilla until smooth. Fold in the flour mixture, then fold in remaining chocolate chips. Pour batter into pan and spread evenly. I like my peanut butter to go on smoothly, so I put in in a saucepan for a few seconds on low heat until it becomes a little bit more liquid. At this point, pour the peanut butter all over the brownie mixture, then with a knife, skewer, or a toothpick, swirl the peanut butter throughout and bake in the oven for about 35 minutes for a creamy fudgy center, or 45 minutes for a more firm brownie. The hardest part is letting these cool down long enough to cut into squares and devour. I recommend placing the pan in the freezer until it sets enough for you to be able to slice into it. Enjoy!
